Mother Nature once again painted a perfect day for our Annual BBQ on the Mountain July 12th. In excess of 130 people attended the event and enjoyed gathering as a community, connecting with old friends and celebrating our wonderful mountain lifestyle.
A big thank you to all who attended, volunteers, cooks, servers and AMCS Board members who worked very hard to pull off this major event.
See you all next year!
Dean Stevenson, President AMCS Board
Beans, beans, the more you eat . . . ;)
What’s a community barbeque without baked beans? So, absolutely beans were on the 2025 BBQ on the Mountain menu, and they received rave reviews. A few attendees requested our recipe, so here you go!
AMCS BBQ on the Mountain Baked Beans
3 Tablespoons canola oil
1 medium yellow onion, chopped
2 cans (540 ml) 6-bean blend, drained and rinsed
2 cans (398 ml) baked beans in tomato sauce
½ cup tomato ketchup
1/4 cup Bulls Eye Bold BBQ sauce
1 cup unsweetened apple juice
2 Tablespoons apple cider vinegar
2 Tablespoons Dijon mustard
Heat oil in a large, heavy pot and saute onions until soft and slightly golden. Add all other ingredients to the onions. Stir well. Bring the mixture to a low boil and then simmer for ½ hour. Transfer the mixture to a slow cooker. Cook on a low setting for 6 hours. Stir once an hour. Leave the lid off the slow cooker for the last hour, if needed, to achieve a thick, stew-like consistency.
Makes approximately 20, ½ cup servings.
